pH is the measure of acidity/alkalinity of a substance. A pH of 7 is considered is neutral. Less than 7 is the acidic pH, with 1 being most acidic. Thus a vegetable with a pH of 5.3 is slightly acidic. A ph of 4.6-6.9 are called as low acidic foods. Thus, the vegetable is low-acidic.
