Scientists can date sedimentary rocks that are young like less than 50 thousand years but for them to date older rocks they look for surrounding igneous rocks or volcanic ash and date them with radioactive elements that don't easily decay like uranium and potassium. By doing this they can get the age of the sedimentary rock this process is known as "bracketing"
