    Phospholipids are complex molecules with a lipid "tail" and a phosphate "head" so it can interact with water and lipid. To interact with water the molecule should be polar or hydrophilic and the one who meets the requirement is phosphate head. Lipid is hydrophobic and won't interact with water.
