    In addition to yeast, bacteria play an important role in sourdough bread making ... The yeast feed on some of the sugars and make carbon dioxide that raises the dough. The bacteria in sourdough feed on some of the remaining sugars and produces lactic acid which gives the dough a lower pH and a slightly sour taste
