    Unsaturated fats are regarded as heart-healthy because they do not form a waxy plaque in the arteries. Unsaturated fats may be monounsaturated and polyunsaturated. Monounsaturated fats are those have one double bond in their molecular structure whereas polyunsaturated have more than one double bond in their molecular structure. Monounsaturated fats are found in olive oil, sesame oil, and canola oil, avocado, peanut butter and other foods. Polyunsaturated fats contain omega-6 fatty acids as in soybean oil, corn oil; and omega-3 fatty acids as in canola oil, nuts and some fish. Omega-3 and omega-6 fatty acids are heart healthier fats.
