Why is farming the most significant activity that accelerates soil erosion

By taking the roots out of the ground (from the plants you harvest), there is nothing to keep the soil in place. Since there is a period of time from when the plant is harvested, until the next plant grows significant roots, erosion is expected to happen at a faster pace.
