Why during commercial fermentation does special care need to be taken to keep the vats sealed during the process? to keep any bacteria from consuming the yeast if oxygen is allowed to be present the fermentation process will not happen excessive amounts of carbon dioxide will be produced only glycolysis will happen

    If oxygen is allowed to be present only glycolysis will happen.
