    Families were mostly separated because they were going to be sold. This happened in two major ways, father sold away from family or parents sold individually to sell children. The states the slaves were most afraid of being sold were Texas, Lousiana, and Missisipi.

    The reasons that back the answer are that in the first place slave families were separated because they represented value for their owners on an individual scale. Therefore, Slavists treated them like an item. Considering them individuals. Now, they represented more money if they married in the plantations and had children. That way the investment grew, so they were allowed to carry "broad marriages". Now, Texas, Lousiana, and Mississippi were states that had one of the most aggressive cultures towards them. Therefore, they feared to go to those states. Slavists were very cruel in Lousiana especially.
