    We need 75 quarts of 3% butterfat milk. How much of 2% and 5% do we need to mix? (t = 2% and f = 5%)

    A) t + f = 75

    B).02 t +.05 f = (.03 * 75)

    B).02 t +.05 f = 2.25

    Solving for t and f:

    t = 50 quarts of 2 % and

    f = 25 quarts of 5%

    Double-Check

    50 *.02 = 1 quart of buttermilk

    25 *.05 = 1.25 quarts of buttermilk

    2.25 quarts divided by 75 quarts = 3 % buttermilk
