    (f - g) (x) = - 2x^2 + 10x

    x^2 + 6x - 1 - (3x^2 - 4x - 1)

Distributive - 1 to each term in parentheses.

    x^2 + 6x - 1 - 3x^2 + 4x + 1

    Combine like terms.

    -2x^2 + 10x
