What properties are emergent properties of a substance and not properties of its individual particles?

    Emergent properties are in general those which are associated to a group of item - a system - but you would not find in any of the individual parts of the system. For example, in chemistry a compound consists in atoms of elements bonded each other. The compound have properties as color, density, etc. that the individual elements do not have. A very clear example is sodium chloride (NaCl) a compound which is made of sodium ions (Na⁺) and chloride ions (Cl⁻). Sodium chloride is a white solid, and tastes salty, but neither sodium or chloride tastes salty. In fact, sodium is a soft metal and a chlorine solution is light yellow. Separately, the constituting elements are quite different to the compound itself.
