Almost 500 grams of sugar can dissolve in 100 milliters of boiling water. you have a boiling solution of liquid with as much sugat as it can hold. if you cool the solution slowly and sugar does not settle out as it cools you know the solution is

    The solution is 'supersaturated' ... holding more solute than it's supposed to be able to hold.
