Pop history goes on at length about medieval urban people throwing their waste into the streets, because that seems pretty gross nowadays. However, most medieval people lived in rural areas. They dumped their waste on the dungheap or down the latrine. An archaeologist would call those places middens. I guess you could call them dumps, although the waste wasn't always buried until other waste covered it.
