    A homogenous mixture is of sugar and water means that molecules of sugar and water are distributed uniformly throughout the mixture. Kinetic theory deals with the movement of molecules in a substance. According to the theory, as mixture begins to boil, the particles gain more kinetic energy and begin to move with increased speed. As their motion increases, the intermolecular forces between particles decrease further, there are more collisions between rapidly moving particles, such that as water molecules gain sufficient kinetic energy, they escape the surface of water, in the form of a vapor. As water molecules evaporate, sugar molecules are left behind
