Chlorophyll gives plants their green color. Chlorophyll is produced only when plants are exposed to light so plants kept in darkness have no chlorophyll are appear white. The best explanation for this is that

    The chlorophyll is created by organelles called chloroplasts. These chloroplasts feed on sunlight, and produce food for plants. If I'm correct, they also produce green pigmentation. If there is no sunlight, then there is no food that will be transformed into pigment.
