This fermentation process of anaerobic microorganisms comprises a series of processes, which interact with each other, in a series of metabolic reactions in the absence of oxygen. These metabolic processes are divided into 3 groups: 1) hydrolysis and fermentation, 2) acetogenesis and 3) methanogenesis.
